Super Green Salad with Tart Cherries and Butternut Squash

I hope you all had a wonderful Thanksgiving weekend! Hopefully your pants still fit and you are not lying on the couch in a pie and turkey coma! After a food-filled weekend I decided to make something nice and light, but still wintry and with some protein. The fresh greens and tart chewy-ness of the cherries are a welcome change in flavor after all the heavy holiday food. The best part about this recipe is the type of dressing you choose almost doesn’t matter. This would probably be just as good with a little squeeze of lemon and drizzle of oil.

If you live near a Trader Joe’s, the Smoked, Apple Chardonnay Chicken Sausage is really nice with this dish, and it’s perfect for a quick dinner since most of the ingredients are just ready to be tossed together. I also used a Super Greens mix, that has Baby Kale, Baby Chard, Baby Spinach, and arugula, but you can use any greens you like.

Super Green Salad with Tart Cherries and Butternut Squash


  • Super Greens, Kale, Spinach, or other dark green mix
  • Tart Dried Cherries
  • Roasted Cubes of Butternut Squash
  • Roasted Squash Seeds
  • Crumbled Feta
  • Smoked Apple Chardonnay Chicken Sausage (or other protein)
  • Dressing
  • 1/2 cup Olive Oil
  • 1/4 cup Red Wine, or Apple Cider Vinegar
  • 1 teaspoon mustard
  • 1/2 teaspoon honey
  • salt
  • pepper


  1. Whisk dressing together and toss with washed greens until leaves are coated.
  2. Add all the other toppings and toss lightly
  3. Serve immediately
